Ingrediënten


 380 g Sushi rice
 400 ml coconut cream
 200 g granulated sugar, plus 1 tbsp. for the topping
 100 g coconut powder
 1 lime, grated
 kardemompoeder

Bereiding

Place the sushi rice in a bowl and add enough water to cover the rice. Let the rice soak for at least 4 hours. Then let the rice drain in a colander.

Preheat the oven to 180º C. Line a square baking dish with baking paper.

Place the soaked rice in a pan with 600 ml of water and bring to the boil. Reduce heat and cook for 20 minutes.

In another pan, mix the coconut cream with the sugar and bring to the boil. After about 5 minutes the mixture has thickened
and all the sugar has dissolved. Then add 70 grams of coconut powder, the lime zest, cardamom and rice.

Pour the mixture onto the baking tray. Mix the rest of the coconut powder with the tablespoon of sugar and sprinkle it over the rice mixture.

Bake in the oven for 45 minutes. Then let it cool first and, if necessary, set in the refrigerator. Then cut into squares with a sharp knife.
