Ingredients

 250 g spelt flour
 2 tsp baking powder
 150 ml skim milk
 2 Eggs
 100 ml maple syrup
 100 g Brown sugar
 ¼ tsp cardamom
 ¼ tsp ginger powder
 1 tsp cinnamon
 anise powder
 coriander powder
 100 g nuts (mixed)

Preparation

1

Preheat the oven to 160 ºC.

2

Sift the flour and baking powder and mix with a pinch of salt.

3

In another bowl, mix the milk, eggs, maple syrup, sugar and all the spices with the whisk. Season with salt and pepper.

4

Gradually pour the milk mixture into the flour mixture and stir well until there are no lumps. This can also be done with the mixer.

5

Pour the batter into a baking tin lined with baking paper and decorate with the nuts.

6

Bake the gingerbread in the oven for 40 to 45 minutes. Check with a skewer whether it is done: if no batter sticks to the stick, the cookie is ready!
Start timer for 45 minutes

7

Let cool and cut into slices.
